A Build-Your-Own-Pizza Girls Night

It’s that time of the month again. My turn to host Girls Night! I went back and forth on what to make for our meal. With some input from a friend, I decided to do a “build your own pizza” night. This way the girls could create their favorite pie.  Doing this would also take some of the tasks off of me; just some simple prep work for toppings and dough.

I prepped the dough ahead of time by cutting one standard store-bought dough in half. I then rolled it out into a personal size and placed two onto a cookie sheet drizzled with olive oil.

I had a bunch of ideas for the types of toppings but I did not want to go overboard. Instead I kept it simple. I provided two types of sauce, a standard pizza sauce and a pesto sauce. The rest of the toppings consisted of the following:
1. Sliced vine ripen tomatoes
2. Marinated artichoke hearts
3. Slices of roasted red peppers
4. Pepperoni
5. Pieces of bell pepper
6. Italian season and crushed red pepper
7. Mozzarella cheese, of course!

The pizzas were baked at 425 degrees Fahrenheit for about 12-15 minutes. They came out with a crispy crust, thanks to the olive oil and a bubbly, cheesy top!

I think the ladies enjoyed themselves. They were able to create their own pizza with toppings they liked the most. It allowed for a little hands on rather than sitting around waiting for dinner to be served (which happens far to often when it’s my turn!). Paired with a simple tossed salad and a crisp white wine (compliments of Dianna) we had ourselves a pretty great Girls Night.
