My girlfriend Sarah planted a vegetable garden this year. Last time I was over to visit, she had a plethora of delicious home grown veggies to share; one of which was a very large zucchini. I decided to bake it up into a delicious treat. Thanks Sarah!
Ingredients 1 1/2 cup all-purpose flour 3/4 cup sugar 1 tsp baking soda 1 tsp cinnamon 1/2 tsp nutmeg 1/2 tsp sat 1 egg, beaten lightly 1/2 cup vegetable oil 1/4 cup milk 1 tsp vanilla extract 1 cup shredded zucchini Directions Preheat oven to 350 degrees Fahreinheit. In a large bowl, combine the flour, sugar, baking soda, cinnamon, nutmeg, and salt. In a separate bowl, combine the egg, oil, milk, and vanilla; mix well. Stir wet mixture into the dry ingredients until just combined. Fold in the zucchini. Fill muffin liners two-thirds full. Bake for 20-25 minutes, or until cooked through and golden brown.17
