Did you ever wonder how someone comes up with a new recipe? What get’s their creative juices flowing to figure out how to combine a few ingredients into a delicious dish? Well today my sister Michele and I did just that. Now I could just describe the recipe to you all per usual but I really think it would be more fun for you to see how we came up with it. Keep in mind that Michele and I work for the same company. So, we are able to communicate easily throughout the day via IM.

Quinoa with Caramelized Onions, Broccoli, and Mushrooms

Ingredients
1 onion, sliced
2 cloves of garlic, minced
1 pint mushrooms sliced
1 cup quinoa
2 cups broccoli steamed al dente
1- 2 Tbsp olive oil
1-2 Tbsp balsamic vinegar
Salt and pepper

1 lemon
Parmesan Cheese, grated
Parmesan Cheese, grated
Directions
Pour 2 cups of water and 1 cup of Quinoa into pot and cook on high until water boils. Cover, reduce to simmer, and cook for about 10-15 minutes until all of the water is absorbed. Put off to the side until vegetables are ready.
Coat the a saute pan with olive oil and saute the garlic for about a minute. Add in the sliced onions and balsamic, allowing for the onions to carmelize .
Add in the mushrooms and broccoli, season with salt and pepper. Continue cooking until all of the vegetables are cooked through.
Squeeze in the juice of one lemon and stir.
Toss the Quinoa with the vegetables until combined. Top with grated Parmesan cheese. Serves as a great side dish to grilled salmon.
Serves 4.
