Oreo Cheesecake

IMG_5393A friend of mine has been requesting that I make a dessert for some time now. With a Sunday of house chores and relaxation ahead of me, I decided it was the perfect day to create this masterpiece. I decided on an Oreo cheesecake. I found a recipe on Pinterest that looked pretty straight forward. I also have never made Oreo cheesecake, since well, I’m not really a huge fan of Oreos. GASP! I know, I know. I’m told it was pretty delicious, so perhaps this will stay in my recipe book of “To Be Made Again” treats. (more…)

Mascarpone Chocolate Toffee Bars

I came across these delectable treats on one of the Giada at Home episodes. While salivating over the TV screen,  I noticed that the ingredients were pretty standard and the recipe was extremely simple. I actually had almost all of the ingredients on hand too! So I decided to give them a try. And let me tell you, they taste as good as they look. Maybe better! (more…)

Blueberry-Cherry Pie

There is nothing that speaks Summer like pie does. Strawberry rhubarb, raspberry, peach, blueberry, cherry…pretty much any fruit that you can pick up at the farmers market and turn into a delicious dessert. When I wanted to make a tasty treat for the 4th, blueberry and cherry pie jumped out at me. The colors speak for themselves, festiveness in a pie plate. I took it one step further by cutting little stars in the crust. (more…)

S’More Brownies Please!

S’mores are probably the most quintessential summertime treat. There is nothing better than sitting by the camp fire, toasting up some marshmallows, and sandwiching them between chocolate and graham crackers. I personally am a huge fan of s’mores. I believe my record in one sitting is over ten; a few of my cousins  and siblings can attest to that. 

With all of that being said, when I cam across a picture of s’mores brownie I was very intrigued. A brownie all by itself is delicious. Layer it with a graham cracker crust and top them off with toasted marshmallows and you have yourself an oozy-gooey, decadent dessert. I just know you are as excited right now as I was. Chocolate Peanut Butter Fudge

I learned something pretty amazing today. Fudge came up in conversation in the break room, as various foods typically do, and I was told that Fluff could be used to make it. I was very intrigued by this idea and decided to give it a try. I could have made a simple chocolate fudge, however I came across this chocolate peanut butter fudge recipe on Pinterest from Recipe Girl.  This recipe was so simple and quick, I had it in the fridge to set within 20 minutes. Pistachio Cupcakes

Last October I was asked to make cupcakes for my childhood friend’s wedding. The couple asked that I mix up the flavors for the 100 plus cupcakes I was to make  under one condition…I must make a pistachio cupcake! You see, the groom LOVES pistachios. Not just the nut in a shell either. He loves the ice cream, the muffin, the pudding…really anything you can flavor with pistachios. At the time, I had never made a pistachio cupcake but I am always up for a new recipe. So I did as any normal amateur baker would do, I turned to my Pinterest friends. After looking at dozens of recipes I was able to come up with one that I thought would work best. 

(Not so) coincidentally, Nick was the photographer for this very same wedding. A baker and photographer under one roof. Not too bad huh?  Anyways, since I was also a guest at the wedding Nick had asked his brother to help by being the second shooter. This is where Matt (the brother) experienced his very first pistachio cupcake. It was love at first bite. For months he talked about this cupcake and how he couldn’t wait for his birthday so that I could make him his very own batch. Well, his birthday had come and gone and I still had yet to make Matt his cupcakes. In my defense he was out of town the week of his birthday so I just never got around to doing it. But enough is enough right? Tonight I decided to fulfill his wishes and make a batch of pistachio cupcakes.  (Mostly to get him to stop bugging me about it!!)
